Sunday Stills ~ Hot Sauces and Salsas

 

Just want to say “HAPPY BIRTHDAY JAX and JEM!!” Sunday is my twinling sons’ 13th Birthday!!!!! I'm now a Mom of teenagers. gah! Jax and Jem, I love you guys. You are the best sons a Mom could ever have!

I missed my first Sunday Stills in a year, last Sunday due to a very busy weekend participating in a Trail Clinic on Saturday and a 2 1/2 hour trail ride on Sunday. I enjoyed every minute, but I was too exhausted each evening to do anything but upload the photos from each day into my blog. I missed seeing what everyone came up with for textures. The world is full of textures and they are especially interesting to see in macro. Which sadly I skipped out on Macro Monday last week, too. Sorry everyone. I hope I was missed just a little?

Seeing as how I live in New Mexico, I knew I could come up with something to fit into this week’s challenge and I knew it would have to showcase our state’s favorite food: Green Chile! An authentic New Mexican meal wouldn’t be complete without green chile.

The following dish is just something I throw together sometimes. I call it ‘Layered Enchiladas’. It can be made with just about anything you have in your house. You can use chicken, pork or turkey. You can add onions, tomatoes, cilantro, cheese, whatever floats your boat.

This is the way I made Layered Enchiladas with what I had around the house this weekend.

 

1. Fry white corn tortillas in oil, until crisp.

2.Let them drain on some paper towels. Add a little salt if desired. I always fry extra because they are basically just delicious tortilla chips, and can be eaten as a tasty snack.

3.Heat a can of refried beans (I add onion powder, garlic powder, pepper and red chile powder for flavor). Spread over corn tortillas.

4.Brown ground beef. Season with onion powder, salt and pepper, if desired.

5.Spoon over refried beans and corn tortillas.

6.Gather up some farm fresh eggs. These were laid by my chickens the day before. (Notice those two extra-large eggs at the top of the plate? They hold a surprise inside).

7.See?! Twin Eggs with Twin Yolks! Perfect surprise for my twin sons’ birthdays, wouldn’t you say?!

8.Cook the eggs, but let them stay runny. Drippy eggs add the perfect creamy rich texture.

 

9.Heat a can of Green Chile Enchilada Sauce and pour over the ground beef, refried beans and corn tortillas. (Add shredded cheese, chopped tomatoes, cilantro, and sour cream if desired)

10.Place Drippy Eggs on the very top. Enjoy!

That looks really good, people here in Florida don't understand the green chili, red chile thing. I love green chili too especially on fresh eggs. I will be trying this soon. Teenagers then out into the world, it goes by way too fast!

Happy Birthday to Jax and Jem!! My gosh, how you're growing!!

I usually just layer my enchiladas in a 9 x 13 pan like lasagne without even precooking the tortillas. However I add lots of cheese to the meat, beans, and green or red chili sauce. Then I bake it an hour and cut into squares to eat. Fry an egg and throw it on top for breakfast, lunch or dinner. Yummy! Sounds good on a snowy day like today.

mmm this looks so good. My mom makes a secret family recipe of taco's. Tortilla shells and all. She made them last weekend and my best friend came over and my boyfriend who has never had them. When she makes them it's a whole family ordeal theres a minimum of 5 guests here when they hear shes making tacos.

Thanks for your comment on our blog. I am still what I'd call and "adventurous beginner" rider (bad experience with my first horse when I bought her drugged) - so I'm learning what to do when the unexpected happens.

I think this was her first time ever in a bosal and she seemed a bit less responsive. However - I'm not sure how I could have done a one-rein stop while on her sideways (I'm about to stop riding with stirrups).

Any suggestions to help me with a quicker response if there's a next time? This whole situation has been such a learning experience!
